Looking for a salad to wow at a warm-weather picnic? Michele is sharing a simple, wholesome recipe from her own kitchen. Fair warning: Make an extra batch of this creamy homemade dressing packed with sesame and poppy seeds--you'll want to pour it on salads and grilled vegetables all year long!
Spinach & Strawberry Salad
(adapted from Allrecipes.com)
2 bunches spinach, rinsed and torn into bite-size pieces (we also added a handful of curly kale for texture)
4 cups sliced strawberries
½ cup slivered almonds
1 cup Michele's Original Granola
½ cup vegetable oil
¼ cup distilled white vinegar
½ cup white sugar
½ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds
- In a large serving bowl, toss together the spinach and strawberries
- In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds and poppy seeds. Pour over the spinach and strawberries, and toss to coat
- Sprinkle the almonds and granola on top and serve
