Recipe for Festive Apple, Pear & Cranberry Crisp

 

A couple years ago around Christmas time, Michele shared a special seasonal recipe from her home kitchen that was so amazing, we just had to share it again! "This seasonal crisp makes for a festive holiday brunch side dish or delicious dessert topped with ice cream. I enjoyed mine with a dollop of steve's ice cream Small Batch Bourbon Vanilla. Apple, Pear & Cranberry Crisp with Granola Topping

-Preheat oven to 400 degrees
-Lightly grease 8x8” baking dish with just a dab of cooking oil

For the filling:
3 apples, diced
2 ripe pears, diced
1 c. fresh cranberries
¼ c. maple syrup
1 T. cornstarch

-In medium bowl, blend syrup and cornstarch
-Add fruit and toss to coat
-Pour into baking dish, cover with foil and bake for 20-30 minutes or until fruit is tender and juices begin to thicken

For the granola topping:
1 ½ c. Michele’s Original or Cranberry Pecan Granola
1 ½ T. salted butter or Earth Balance, softened at room temperature
½ t. ground cinnamon
¼ t. sea salt

-Lower oven temperature to 375F degrees
-In a small bowl, mix granola, cinnamon and salt
-Add softened butter and combine well with a fork, using the back of the fork to mash the butter evenly into the mixture
-Pour granola mixture evenly on top of the baked fruit when it comes out of the oven
-Return to oven and bake uncovered for 20 minutes or until topping is golden brown and crispy
-Scoop a large spoonful into a small bowl and serve warm
