We love a good collaboration here at Michele's Granola, including letting friends takeover our Instagram feed for the day to share their favorite ways to enjoy our granola. On January 25th, we handed the controls to Lyndsay Martin aka Instagrammer @lyndsay.martin, and we were wowed by her creative posts, including her vegan lemon bar bites with a Michele's Granola crust:

Crust: Blend 1 cup Michele's Ginger Hemp granola with 2 tbsp coconut oil and press in a lined mini-muffin tin just covering the bottom of each liner.
Filling: Blend together 1 cup raw cashews (soaked in warm water for 4 hours) 1/2 cup coconut cream, 1.5 tbsp cornstarch, juice from two lemons and the zest from those lemons, 1/4 cup coconut sugar, and a pinch of salt. Pour the mixture on top of the crust in the mini-muffin tin. bake at 350 degrees for 10 minutes and let cool completely for a few hours in the fridge.
