Have you ever blended granola into a batch of homemade ice cream? Our Original granola, full of almonds and sunflower seeds, adds lovely texture and flavor to this creamy strawberry ice cream recipe from Michele's home kitchen!
Strawberry Ice Cream with Coconut & Granola
Yield: about 2 quarts
2 c. chopped strawberries
1 c. sugar
½ t. salt
2 t. vanilla extract
2 c. whole milk
2 c. heavy cream
½ c. shredded coconut
1 ½ c. Michele’s Original Granola
1. In a large mixing bowl, stir together the strawberries, sugar, salt and vanilla extract, and mash up the strawberries with a fork.
2. Stir in the milk, cream, coconut and granola.
3. Pour mixture into your ice cream maker and follow manufacturer instructions.
4. Once churned, store in an airtight container in the freezer for at least 4 hours and until ready to serve.
